In this article, I’ll explain step-by-step how to cook salmon in an amazing sauce, using simple ingredients and effective techniques to ensure a perfect dish.

Ingredients

  • 2 tablespoons of olive oil
  • 1 tablespoon of butter (lard)
  • Salmon fillets (skinless)
  • Salt and freshly ground black pepper
  • 1 onion (finely chopped)
  • 2 cloves of garlic (minced)
  • Zest of 1 lemon
  • ¾ cup (180 ml) chicken broth
  • ¾ cup (200 g) crème fraîche or sour cream
  • A small handful of fresh dill
  • ½ cup (180 ml) warm milk
  • 3 tablespoons of butter
  • 2 russet potatoes (about 1 kg), cut into chunks
  • 1 tablespoon of salt

Preparation

1. Cook the salmon:

  1. Heat the olive oil and butter in a skillet over medium-high heat.
  2. Place the salmon fillets in the hot pan and season with salt and black pepper.
  3. Cook for 3 minutes without moving them until golden brown.
  4. Turn the salmon over and cook for another 2 minutes.
  5. Remove the salmon and set it aside on a plate.

2. Prepare the sauce:

  1. Reduce the heat to medium.
  2. Add the finely chopped onion to the pan and sauté for 2 minutes until softened.
  3. Add the chopped garlic and lemon zest. Cook for 1 minute or until fragrant.
  4. Pour in the chicken broth and let it simmer for 5 minutes to reduce slightly.
  5. Stir in the crème fraîche or sour cream and fresh dill. Season with salt and pepper to taste.

3. Cook the potatoes as a side dish:

  1. Boil the potatoes in salted water for about 18 minutes until tender.
  2. Drain the potatoes and add the butter and warm milk.
  3. Blend until you get a creamy texture.

4. Finish the salmon:

  1. Return the salmon to the pan and let it cook in the sauce for 3–5 minutes until well infused with flavor.

  • Don’t overcook salmon : The key to juicy salmon is not to overcook it. The inside should be slightly pink.
  • Use fresh dill : Fresh dill enhances the flavor of the sauce and pairs perfectly with salmon.
