Ingredients
- 2 tablespoons of olive oil
- 1 tablespoon of butter (lard)
- Salmon fillets (skinless)
- Salt and freshly ground black pepper
- 1 onion (finely chopped)
- 2 cloves of garlic (minced)
- Zest of 1 lemon
- ¾ cup (180 ml) chicken broth
- ¾ cup (200 g) crème fraîche or sour cream
- A small handful of fresh dill
- ½ cup (180 ml) warm milk
- 3 tablespoons of butter
- 2 russet potatoes (about 1 kg), cut into chunks
- 1 tablespoon of salt
Preparation
1. Cook the salmon:
- Heat the olive oil and butter in a skillet over medium-high heat.
- Place the salmon fillets in the hot pan and season with salt and black pepper.
- Cook for 3 minutes without moving them until golden brown.
- Turn the salmon over and cook for another 2 minutes.
- Remove the salmon and set it aside on a plate.
2. Prepare the sauce:
- Reduce the heat to medium.
- Add the finely chopped onion to the pan and sauté for 2 minutes until softened.
- Add the chopped garlic and lemon zest. Cook for 1 minute or until fragrant.
- Pour in the chicken broth and let it simmer for 5 minutes to reduce slightly.
- Stir in the crème fraîche or sour cream and fresh dill. Season with salt and pepper to taste.
3. Cook the potatoes as a side dish:
- Boil the potatoes in salted water for about 18 minutes until tender.
- Drain the potatoes and add the butter and warm milk.
- Blend until you get a creamy texture.
4. Finish the salmon:
- Return the salmon to the pan and let it cook in the sauce for 3–5 minutes until well infused with flavor.
