Recipe 1: Rice with Tuna and Vegetables
Ingredients:
- 1 cup of rice
- 1.5 cups of hot water
- Salt to taste
- 1 onion
- 30 g of ginger
- 1 carrot
- 1 branch of celery
- 4 eggs
- 100 ml of cream
- 1 teaspoon of Italian herbs
- 1 teaspoon of turmeric
- ½ teaspoon of salt and black pepper
- 2 cans of tuna
- Breadcrumbs (1 tablespoon)
- 1 teaspoon of paprika
- 1 bunch of parsley
- Zest of ½ lemon
- Olive oil
Preparation:
- Wash the rice and fry it in a little olive oil for 4-5 minutes.
- Add the hot water and salt. Cook covered over low heat for 10-12 minutes.
- Sauté the chopped onion in olive oil for 3-4 minutes.
- Add the chopped ginger, carrot, and celery. Cook for another 5-7 minutes.
- Beat the eggs with the cream, turmeric, salt, pepper, and Italian herbs.
- Pour the egg mixture over the hot rice and cook, stirring, for 3 minutes.
- Remove from heat and mix with the vegetables.
- Drain the tuna and crumble it into a bowl. Add 2 eggs, breadcrumbs, paprika, parsley, lemon zest, and pepper. Mix well.
- Form into pancakes and fry in olive oil until golden brown.
- Serve with a sauce of Greek yogurt with Dijon mustard, grated gherkin, chopped garlic, chives, and salt.
Additional tips:
- Use brown rice for a healthier version.
- Make sure to drain the tuna well to avoid a soggy texture in the cakes.

Recipe 2: Tuna-Stuffed Potato Cakes
Ingredients:
- 4-5 medium potatoes
- 1 tablespoon of salt
- 1 can of tuna
- 1 onion
- 1 large grated carrot
- 1 bunch of chopped chives
- 1 egg
- 100 g grated Gouda cheese
- 4 tablespoons of flour
- Salt and pepper to taste
- Olive oil
Preparation:
- Peel and cut the potatoes into chunks. Cook them in salted water until tender.
- Drain, cool and grate them.
- Mix the potatoes with the egg, grated cheese, flour and a pinch of salt.
- Sauté the chopped onion in olive oil for 2-3 minutes.
- Add the grated carrot and cook until golden.
- Add the drained tuna and chopped chives and mix well.
- Take portions of the potato dough, fill with the tuna mixture and close to form patties.
- Fry them in olive oil until golden brown (approximately 3 minutes per side).
- Serve hot with a mushroom and leek sauce.
Additional tips:
- Use Parmesan cheese for a more intense flavor.
- If you prefer a lower-calorie option, bake the cakes instead of frying them.
